Jackfruit Burgers

I have tried two delicious ways of creating burgers that are not heavy to digest but yet still delicious and give you that happy feeling of freedom whilst tucking into something so good with sauce, I must say barefoot as it’s summer time and feeling somewhat chuffed and happy to be eating a delicious burger. Well that’s how I felt and I wish you to have the same experience so give this recipe a go, I served mine with jacket potatoes, fresh pesto and wrapped in a lettuce leaves however feel free to create your own deliciousness.

Jackfruit burgers

  • Coconut oil for cooking.
  • 2 onions
  • 3 garlic cloves
  • 1tbsp smoked paprika
  • 1tbsp ground cumin
  • 1tsp garlic powder
  • 450g jackfruit
  • 80g toasted walnuts
  • 2tbs tamari (Soy sauce)
  • 180g cooked quinoa
  • 250g red kidney beans
  • 2 eggs
  • 80g nutritional yeast
  • 80g breadcrumbs
  • Seasoning
  • Step 1 Get a pan, add some oil and add your peeled and chopped onions and garlic, cook for around 5 minutes and add your smoked paprika, cumin, garlic powder and keep cooking.
  • Step 2 Add your tamari to the ingredients and stir, then add the strained jackfruit to your pan. Mix all together and carry on cooking on a medium heat. Add the walnuts and cooked quinoa and mix everything together once more.
  • Step 3 Get your blender, add the cooked mixture plus your two beaten eggs, nutritional yeast and seasoning and pulse together. Form your burgers with your hands, add the breadcrumbs to a bowl and coat the burgers. Line a baking tray with parchment paper and bake at 160C for around 25 minutes. Remove from the oven and set aside.
  • Step 4 With the above ingredients I made 8 burgers.
