Falafel with cauliflower and tempeh.

Tempeh is a wonderful source of protein and digestive health and I love falafel so combining tempeh with cauliflower gave a delicious taste plus you are feeding yourself with food that makes you feel great and does you lots of good. Give this recipe a try and you will surely keep making it, I suggest a tahini sauce and some tabouleh to serve them with. You will need the following ingredients to make your falafel,

  • 350g cauliflower
  • 250g tempeh
  • 1 garlic clove
  • 1tbsp ground cumin
  • 1tsp salt
  • 1tbsp smoked paprika
  • 1tsp garlic powder
  • 1tsp onion powder
  • 1tsp black pepper
  • 2 eggs
  • Coat the falafel in,
  • 100g ground almonds
  • 40g arrowroot
  • Coconut oil
  • Step 1 Line a baking tray with parchment paper and set aside. Heat the oven at 160C.
  • Step 2 Get your blender and add the washed chopped cauliflower including the stems and the chopped tempeh together with the rest of your falafel ingredients and blend until finely chopped in your food processor and you can make the falafel with your hands.
  • Step 3 Get a bowl and add the arrowroot and ground almonds, mix them with a spoon and coat your falafel in them. Add them to your baking tray and cook in the oven for around 20 to 25 minutes until they are nice and crunchy.
  • Step 4 I made around 14 Falafel. You can add these to wraps and have the leftovers for lunch the following day.
