Burgers with red rice.

I came across this recipe and didn’t have most of the ingredients so I adapted to what I had and the taste was so good, I had to share as I never was really enthusiastic over the taste of vegetarian burgers before however this recipe and the previous one I shared surely make the effort worth while when your bite into these delicious burgers. Give them a try and enjoy them.Create delicious toppings and some french fries too.

Red rice burgers

  • Coconut oil for cooking.
  • 2 onions
  • 3 garlic cloves
  • 1tbsp smoked paprika
  • 1tbsp ground cumin
  • 1tsp garlic powder
  • 1tsp onion powder
  • 300g Portobello mushrooms
  • 80g toasted walnuts
  • 2tbs tamari (Soy sauce)
  • 200g cooked red rice
  • 250g red kidney beans
  • 2 eggs
  • 80g nutritional yeast
  • 80g breadcrumbs
  • Seasoning
  • Step 1 Get a pan, add some oil and add your peeled and chopped onions and garlic, cook for around 5 minutes and add your smoked paprika, cumin, garlic powder and keep cooking. Add your washed and chopped mushrooms to your pan and cook. Get a pot and cook your red rice, strain and set aside.
  • Step 2 Add your tamari to the ingredients and stir, then add the cooked red rice and strain your kidney beans and add to your pan. Mix all together and carry on cooking on a medium heat. Add the toasted walnuts and mix everything together before you turn off the heat and set aside.
  • Step 3 Get your blender, add the cooled cooked mixture plus your two beaten eggs, nutritional yeast and seasoning and pulse together. Form your burgers with your hands, add the breadcrumbs and some more nutritional yeast to a bowl and coat the burgers. Line a baking tray with parchment paper and bake at 160C for around 25 minutes. Remove from the oven and set aside.
  • Step 4 With the above ingredients I made 8 burgers. Serve with chips, sauce and whatever you fancy.
