A delicious loaf that is easy to make and is suitable for all dietary requirements, I love this bread toasted in the morning and I add some tahini spread or nut butter. The dates give it a tinge of sweetness and the nuts add to it’s flavour, plus it’s a great way of using up your soft bananas. To make this recipe you will need,

Ingredients
  • 280g buckwheat flour
  • 1tbsp baking powder
  • 1sp baking soda
  • 1tsp cinnamon
  • A pinch of salt
  • 4 ripe bananas
  • 180ml water or nut milk
  • 1tsp vanilla paste
  • 80g medjool dates pitted
  • 60g pecans
  • 50g dark chocolate
Directions
  • Step 1 In a bowl mix your dry ingredients together and set aside. Get another bowl and mash your bananas and add the liquid together with your vanilla paste plus your chopped pitted dates, chopped chocolate and mix all together. Add the dry ingredients to your banana mixture and add the loaf to a lined loaf tin and bake at 160C for around 25 minutes.
  • Step 2 Remove from the oven and let cool. Trust me it doesn’t last long and enjoy it.
