Spicy aubergine appetizers

  • 1 aubergine
  • Some cherry tomatoes
  • 1 red chili
  • Fresh mint
  • 1 garlic clove
  • Olive oil
  • Seasoning
  • A handful of capers
  • Nutritional yeast
  • Step 1 Get a baking tray, line it with parchment paper and add your aubergine slices.
  • Step 2 Slice your chili in half and remove the seeds, add to a blender together with the rest of the ingredients, except for the nutritional yeast and pulse a couple of times.
  • Step 3 Put a teaspoon of the tomato mixture on each aubergine slice, sprinkle the nutritional yeast and add the olive oil over the aubergine slices. Bake them in the oven for around 12 minutes at 160C.
