The sweetness in this loaf due to the chestnuts and sweet potato make this a wonderful meal and great for leftovers too. Add a salad or cut a slice and make a sandwich, whichever way it’s a nice way of getting your vegetables. To make this loaf you will need,

A mushroom loaf

  • 2 leeks
  • 1 garlic clove
  • 1kilo mushrooms
  • 3 sweet potatoes
  • 200g brazil nuts
  • 200g chestnuts
  • 1tsp fennel seeds
  • 1tsp dried sage
  • 1tsp smoked paprika
  • 1tsp onion powder
  • 1tsp garlic powder
  • 1 parsnip grated
  • 1tbsp nutritional yeast
  • Fresh celery and parsley
  • 2 eggs
  • Step 1 Cook your chestnuts by boiling them until cooked. Strain and set aside. Get a pan, add some olive oil and add your peeled and chopped leeks together with the smoked paprika, garlic and onion powder and your peeled and chopped garlic. Cook for 2 minutes and add your washed and chopped mushrooms. Let them cook on a low heat.
  • Step 2 Peel and thinly slice your sweet potatoes, lay them on a baking tray lined with parchment paper and bake for ten minutes. Remove and set aside.
  • Step 3 Add the grated parsnip, fennel seeds and sage to your mushrooms and mix. Add the ingredients to your blender together with your washed fresh celery and parsley, eggs and nutritional yeast and mix all together.
  • Step 4 Get a loaf tin,line with parchment paper and add your sweet potatoes at the top.
  • Step 5 Sprinkle some nutritional yeast and bake at 160C for 20 minutes.
