There never was a better time when we needed good comforting food to make us feel warm and loved and a bowl of this soup comes pretty close in my opinion. It’s full of veg and spices plus some sweetness as I added half a banana for more deliciousness. Decorate your soup with some stir-fried oyster mushrooms, toasted cashew nuts and coconut. To make this wonderful soup you will need,

  • 2tbsp olive oil
  • 2 leeks, peeled and chopped
  • 4 garlic cloves , minced
  • 1tbsp curry powder
  • 1tbsp fresh ginger, finely chopped
  • 1tbsp ground coriander
  • 1 tbsp smoked paprika
  • A pinch of dried chilis
  • ½ a banana
  • 400g pumpkin
  • 200g carrots
  • 1 sweet potato
  • 1 litre vegetable stock
  • 400ml coconut milk
  • 120ml creamy peanut butter
  • Mushroom topping.
  • 1 oyster mushroom
  • 1tbsp olive oil
  • 1tbspsmoked paprika
  • 1tsp garlic powder
  • 1tsp onion powder
  • Step 1 Get a pot add some oil and your leeks, garlic, ginger and spices and cook on a medium heat for around 5 minutes. Add some of the stock if ingredients start sticking to the pan.
  • Step 2 Add the rest of your stock plus your peeled and chopped vegetables, your ½ banana and cook until vegetables are tender.
  • Step 3 Finally add the coconut milk and peanut butter and give the soup a good stir before blending.
  • Step 4 Whilst your soup is cooking get a pan, add the oil and chop your washed oyster mushroom. Pull off pieces and chop them and add to the pan together with your smoked paprika and onion and garlic powder. Cook and set aside.
  • Step 5 Plate your soup and sprinkle some oyster mushrooms, cashew nuts and coconut flakes.
