With all the information being shared on how we should be eating for the New Year there is one thing I surely know. Eat lots of different vegetables and eat whole foods. Avoid processed at all costs. It does you no favours and a good balanced diet makes for a happier you. So the first recipe for 2020, is a veggie stir fry. You can add fish or any other meat if you wish. Stir fried cauliflower rice

Ingredients
  • ½ a cauliflower
  • 1tbsp smoked paprika
  • Seasoning
  • Olive oil
  • Omelette
  • 3 free range eggs
  • Fresh parsley
  • Stir fry
  • 1 savoy cabbage
  • 1tbsp veggie stock
  • 3 peppers
  • 1 onion
  • 1 garlic clove
  • 1tbsp tamari
  • 1tbsp fish sauce
  • 60g sesame seeds
  • 200g peas
  • Coconut oil
  • 1tsp turmeric
  • 1tbsp ground cumin
  • 2 carrots
  • Some fresh ginger peeled and grated
  • Zest of a lime
Directions
  • Step 1 Start off by preparing the stir- fry. Wash and slice your peppers, place on a baking sheet, add some coconut oil and bake until cooked, this takes around 25 minutes at 160C. Get a pan, add more coconut oil, add your peeled and chopped onion and garlic clove and cook. Add the turmeric and cumin and toss the spices into the onion. Add the stock (you can also add some water if you don’t have some extra stock as you only need a tablespoon.) Add your washed and sliced cabbage and your peas and cook. Add the fish sauce and tamari and toss again. Peel and add your grated carrots and once the veggies are cooked, add the baked peppers together with the lime zest, sesame seeds and fresh ginger. Set aside.
  • Step 2 Prepare your omelette by heating a non stick pan, beat your eggs, add fresh parsley and add to the pan. Cook on both sides and set aside.
  • Step 3 Chop off the stems of your cauliflower florets. Add them to the blender, add your smoked paprika and season and blend until the cauliflower florets are broken down and resemble rice pieces. Get a pan, add some coconut oil and heat, add the cauliflower rice and cook on a medium to hot heat to dry out the cauliflower. Keep stirring with a wooden spoon until cooked. Add the stir fry to the cauliflower rice and chop up the omelette and add it too.
  • Step 4 You can also add some prawns, fish or any other meat should you wish.
  • Step 5 With these quantities you can serve three generous portions with some extra helpings.
