Ingredients
  • 2 litres bone broth
  • 240g fresh pumpkin
  • 1 large tomato
  • 200g red lentils
  • 1 yellow pepper
  • 150g chestnuts
  • 1 sweet potato
  • A handful of fresh parsley
  • 4 carrots
  • ½ cauliflower
  • 1 zucchini
  • 1tsp turmeric
  • 1 tbsp smoked paprika
  • 1 onion
  • 2 tbsp nutritional yeast.
Directions
  • Step 1 Get a pot, peel and chop the onion and add the spices. Peel and chop the veggies, add to the pot, add the broth plus the lentils and chestnuts and let all the ingredients simmer for around 40 minutes until all ingredients are cooked.
  • Step 2 Once all the ingredients are nicely cooked add the nutritional yeast and your chopped fresh parsley. Serve with freshly toasted sour dough croutons. You can serve four to five generous helpings with these quantities.
