The taste of a baked aubergine blended with smoked paprika is simply divine. I often find I need a snack and what better way to enjoy some veggie dip with fresh crudities or crackers. Make this dip and enjoy your snacking. To make this dip you will need,

Baked aubergine dip

  • 1 aubergine
  • 2 garlic cloves
  • 1tbsp yoghurt
  • 1tbsp ground cumin
  • 1tbsp smoked paprika
  • 1tbsp ground flax seeds
  • 100g pine nuts
  • A handful of fresh basil
  • Seasoning
  • Step 1 Get your aubergine and slice in half, add the peeled garlic to the dish too. Pierce the flesh and bake in your oven until cooked at 160C. This is around 15 minutes. Remove and set aside to cool.
  • Step 2 Get your blender add the washed basil and blend the basil into fine pieces. Add the aubergine flesh, the garlic and the rest of the ingredients and blend the ingredients into a smooth paste.
  • Step 3 Chop up some veg and enjoy.
