A healthy loaf.

I Just discovered the beautiful texture of coconut flour and although I have been trying out different home made loaves, once I tried coconut flour, I was completely smitten. Am extremely happy with the end result, so I hope you will be too, I use less eggs then a few other recipes I tried  and I definitely don’t feel bloated so this is a weekly recipe now. Plus it remains fresh too. To make this loaf you will need,

  • 4 free range eggs
  • 80ml almond milk
  • 1tbsp honey
  • 1tbsp coconut or olive oil
  • 80g coconut flour
  • 80g ground flax seeds
  • A pinch of salt and pepper
  • 1tsp arrowroot powder
  • 1tsp baking powder
  • 1tbsp oregano
  • Step 1 Heat your oven.
  • Step 2 You may add any dried spice, last week I added onion powder, ground cumin just add whatever you wish.
  • Step 3 Prepare your dry ingredients in a bowl and mix together. In another bowl, crack your eggs and beat them. Add the milk, oil and honey and mix together.
  • Step 4 Add your wet ingredients to your dry ones and mix together until you have a smooth batter.
  • Step 5 Line a loaf tin with parchment paper and place the loaf into a heated oven for around half an hour at 160C.
  • Step 6 Remove and let it cool.
  • Step 7 Enjoy.
