We all need a good snack, either have this delicious hummus on toast, or eat it with a spoon or add to a wrap, whichever way it is a great way to eat your legumes and vegetable and ideal for kids too. To make this dip you will need,
- 3 carrots
- 2 cloves garlic
- 2tbsp tahini
- 2tbsp extra virgin olive oil
- ½ tsp smoked paprika
- 450g organic chickpeas
- Juice of a lemon
- Some fresh mint
- Step 1 Get a baking dish and add some oil. Peel and roughly chop the carrots and add the peeled garlic and roast for around twenty minutes at 160C. Set aside.
- Step 2 Get your blender, add the roasted carrots and garlic and the strained chickpeas together with your other ingredients and blend until you have a nice creamy consistency.
- Step 3 Store in an airtight container.
