Spring salad with a tahini dressing

Warmer days bring a longing for cooler dishes and a salad always goes down a treat especially when we dress it with a tasty and nutritious dressing. I find that the secret to a wonderful salad is mixing different ingredients and an interesting dressing that adds to the taste. To make this salad you will need,

Spring salad with a tahini dressing.

  • 250g spinach
  • 100g lettuce
  • A handful of goji berries
  • ½ a melon
  • A handful of pumpkin seeds
  • 10 cherry tomatoes
  • 1 zucchini
  • 100g Asparagus
  • Coconut oil
  • Tahini dressing
  • 80ml olive oil
  • 1tbsp tahini
  • 1tsp honey
  • 1 lemon
  • Step 1 Wash your fresh lettuce and spinach and dry. Add them to your dish and start adding the rest of the ingredients. Scoop the flesh out of your melon and add to the salad, sprinkle the pumpkin seeds and goji berries into the salad.
  • Step 2 Wash and slice the asparagus down the middle and grill on a griddle pan in some coconut oil, let them cool and add to the salad.
  • Step 3 Wash and slice your tomatoes, add them to the salad. Get a potato peeler and peel ribbons off your Zucchini and add them too. Toss everything together and dress your salad. Serves two to three if you are lucky.
  • Step 4 Mix the olive oil, tahini and honey in a bowl with a teaspoon and add the juice of the lemon. Pour over the salad.
