Pistachio and dark chocolate cake.

It’s been a while, I misplaced my recipes, I have taken on a course to learn all about the importance of good food in our diet and just can’t seem to get organised however changes in season sometimes do that. I would have loved to upload this recipe before Easter however it didn’t happen. This cake is simply delicious, it is two different cakes in one and the taste is delicious and comforting and goes down a treat after a long day with a cuppa and maybe an episode of one of the great series around or a good book. To make this cake you will need,

Pistachio and dark chocolate cake.

  • Pistachio Cake
  • 250g unsalted butter
  • 200g sugar
  • 3 eggs
  • 150g plain yoghurt
  • 210g self raising flour
  • 1tsp baking powder
  • 1tsp bicarbonate of soda
  • 1tsp vanilla essence
  • 1tsp almond essence
  • 1tsp ground cardamom
  • 200g pistachios
  • Dark chocolate cake
  • 150g sugar
  • 250g unsalted butter
  • 2 eggs
  • 200g self raising flour
  • 60ml oat milk
  • 3tbsp raw cacao
  • 1sp baking powder
  • 200g dark chocolate
  • Step 1 Pistachio Cake
  • Step 2 Heat the oven at 160C, get your food mixer and cream the butter and sugar until your mixture is nice and fluffy on a moderate speed. Beat your eggs in a separate bowl and add them slowly to the butter and sugar on a very low speed. Once this is done, slowly add your flour together with your baking powder and bicarbonate of soda.
  • Step 3 Add the yoghurt and mix together and then add the ground cardamom plus the vanilla essence and the almond essence. Crush the pistachios in a bag and add most of them. Remove a few for the top of the cake. Mix everything together and set the mixture aside and prepare the chocolate cake.
  • Step 4 Dark Chocolate cake
  • Step 5 Repeat as the other cake by mixing the sugar and butter until nice and fluffy and then gently add your beaten eggs. Add the flour and baking powder and mix once more. Add the raw cacao which I have to say gives the mixture a delicious taste of chocolate and finally add the oat milk.
  • Step 6 Give the mixture one final mix and set aside. Get a metal spoon and mix both cake mixtures together in the form of a number eight with a metal spoon. Place the mixture into a cake tin and bake the cake for an hour.
  • Step 7 Once it is out of the oven and has cooled, melt some dark chocolate and cover the top and sprinkle some pistachios.
