Lemon Cake with Lovage.

A cup of tea and a piece of delicious cake are so special to me. Cakes are so wonderful and always go down a treat and I was in need of a good piece of cake and thankfully this cake turned out well and barely lasted. To make this cake you will need,

Lemon cake with lovage.

  • 220g unsalted butter
  • 180g castor sugar
  • 3 eggs
  • 200g self-raising flour
  • 1tsp baking powder
  • Zest of a lemon
  • Juice of a lemon
  • 2tbsp yoghurt
  • 80ml oat milk
  • 2tbsp dried lovage
  • Step 1 Heat the oven at 160C. Get your food mixer and cream the butter and sugar until the mixture is nice and fluffy. Beat your eggs in a bowl and add them gradually to the butter and sugar. Should the mixture start to curdle add some flour.
  • Step 2 Add your flour and baking powder to the mixture and keep mixing, at this stage the mixture will appear to be dry however once you add the lemon juice, yoghurt and milk it will be fine.
  • Step 3 Add the lemon zest and the dried lovage to your cake and beat once more. Place your cake mixture into a cake tin, approx. 20cm diameter and bake in your heated oven for around 35 minutes or until cooked.
  • Step 4 Remove form the oven and once cooled remove the cake tin and squeeze some fresh lemon juice over the cake. Add some icing sugar and put the kettle on.
