Caramelised mushrooms and red cabbage.

The beauty of vegetables is that they are so good for us and keep us healthy too. I have been experimenting with mushrooms this winter and I am very happy with the out come of this dish. I served this dish with fresh sea bass and mashed potatoes and only just finished dinner but I felt I had too share this recipe so maybe it will be on your dinner table tomorrow. To make this dish you will need,

  • 250g fresh mushrooms
  • 1 garlic clove
  • Cooking oil
  • A handful of fresh sage
  • 1tbsp coconut sugar
  • 1tbsp tamari (soy sauce)
  • 1tbsp apple cider vinegar
  • 1tbsp truffle oil
  • 1 small purple cabbage
  • Seasoning
  • Step 1 Get a pan, add some oil and peel and chop your garlic clove. Add the garlic together with the fresh sage leaves and cook. Roughly chop the mushrooms and add them to the pan. Add the sugar, tamari and apple cider vinegar and cook the mushrooms for around a few minutes.
  • Step 2 Roughly chop the cabbage and add to the rest of the ingredients, mix the veg and put a lid on the pan, so the veg steams or add some parchment paper for around seven minutes. Season and switch off the heat. Add the truffle oil and give the dish one last mix and serve.
