A delicious aubergine dish in under twenty minutes.

This dish is rich in spices and all you need is some good spices, quinoa, and a few more ingredients which not only makes this dish quick and easy but also suitable for all types of diet. Prepare your ingredients, cook and serve! To make this dish you will need,

Ingredients
  • 1 aubergine
  • Cooking oil
  • 1 onion
  • 3 garlic cloves
  • 1tsp harissa
  • 1tsp ground cardamom
  • 1tsp cumin
  • 1tsp cinnamon
  • 1tsp smoked paprika
  • 1tsp organic honey
  • 1 jar sun-dried pesto
  • 1 can organic kidney beans
  • 200g quinoa
  • Some fresh ginger
  • 1 turmeric.
  • Some roasted almonds.
Directions
  • Step 1 Wash and chop up your aubergine, place it on a baking dish, drizzle some oil and bake at 170C for fifteen minutes.
  • Step 2 Cook your quinoa according to the instructions on the packet. Set aside.
  • Step 3 Get a pan, add some oil and cook your peeled and chopped onion together with your finely chopped garlic cloves. Peel the turmeric and chop finely and add the spices and cook on a low heat for around five minutes. Strain the kidney beans and set aside. Add the sun-dried tomatoes to the onions and spices together with the honey. Mix the ingredients together.
  • Step 4 Add the kidney beans, remove the cooked aubergine from the oven and add to the rest of the ingredients. Peel and grate the fresh ginger and add together with a few roasted almonds.
  • Step 5 Serve some quinoa topped with your delicious aubergine. With these quantities you can serve three generous portions.
