  • 4 garlic cloves
  • 1 capsicum pepper
  • 2 lemon grass sticks
  • ¼ tsp smoked paprika
  • 1tsp ground turmeric
  • Cooking oil
  • 300g fresh sea bream (Pagella) filleted
  • 1tsp fish sauce
  • 1tbsp tamari
  • 1tbsp sesame oil
  • 120g fresh Kale
  • 500g mushrooms
  • A handful of fresh basil
  • 2 lemons
  • 1.5 litres fresh chicken stock (you may use any stock)
  • 120g soba noodles
  • Seasoning
  • Step 1 Add some oil and peel and chop your garlic and cook, add the turmeric, smoked paprika and chop off the tip of the lemon grass and give it a good knock with a mallet before adding to the pan. Wash and finely chop your capsicum and add to the pan and cook, repeat this with the mushrooms and carry on cooking.
  • Step 2 Add the fish sauce, sesame oil and tamari to the pan and continue to mix the veg in the flavours. Add your stock, kale, noodles, chopped basil and juice of one lemon to the pot and roughly chop up the fish and add. Let everything simmer for a couple of minutes until noodles and fish are cooked.
  • Step 3 Slice the other lemon and place into the soup and season. This soup takes around 25 minutes to cook and you can serve four generous portions with the above quantities.
