Soba noodles in orange juice.

Soba is the Japanese name for buckwheat. It is a thin noodle made from buckwheat flour and is great for a quick dish of noodles. To make this recipe you will need,

Soba noodles in Orange juice.

  • 120g soba noodles
  • Coconut oil
  • 100g pistachios
  • 2 cloves garlic
  • Juice of 1 orange
  • 100g French beans
  • 1 tbsp dried oregano
  • 1 tbsp pickled ginger
  • 100g sweet potato
  • 1 tsp coconut blossom
  • 100ml stock
  • Step 1 Boil the noodles, strain and set aside. Peel and chop your garlic, add some coconut oil to a pan, heat and cook your garlic, add the pistachios and oregano and toss until pistachios are practically toasted. Lower your heat and add the stock and beans and simmer until beans are cooked. Add the coconut blossom to your pan.
  • Step 2 I used leftover sweet potato, however cut a few slices and roast in the oven, once cooked chop and add to your pan, add the cooked noodles to your pan and add your ginger.
  • Step 3 Pour your orange juice over and mix all the ingredients together and serve.
  • Step 4 I served three  portions with these quantities.
