Salsify is a root vegetable also known as the oyster plant because of it’s taste. The taste of this vegetable is similar to the parsnip and can be cooked by boiling, mashing it or roasting. To prepare the root vegetable for cooking, you need to scrub the salsify under cold water, remove the soil and chop off the ends and then peel. I used a potato peeler and it did the job nicely. I roasted them with some oil, a sliced lemon and seasoning. Farmer’s Deli delivered these in my box of goodies.
