Nutty noodles

A sweet nutty sauce, topped with vegetables, served with noodles are my kind of delight. Make this dish and don’t expect leftovers. To make this you will need,

  • 200g udon noodles
  • oil for cooking
  • 1 onion
  • 2 red peppers
  • 1 jalapeno pepper
  • 100g mixed nuts
  • 1 fennel
  • 1 tbsp peanut butter
  • 2tbsp tamari
  • 1 tbsp coconut oil
  • Some fresh basil
  • Step 1 Cook the noodles according to the instructions on the packet. Strain, run cold water over them and set aside.
  • Step 2 Peel and slice the onions and add them to a pan with some heated oil. Stir and cook until soft. Wash and slice the peppers and add to the pan, slice the jalapeno and remove the seeds unless you want this to be very spicy. Add to the pan and cook the peppers until they soften.
  • Step 3 Wash and slice the fennel and add to the pan, mix the veg and keep cooking until veg is soft but has a crunch.
  • Step 4 Crush the nuts in a bag and set aside. Make the dressing by mixing the peanut butter, tamari, coconut oil and fresh basil with a fork. Pour this over the veg, together with the crushed nuts and add the noodles. Mix thoroughly and serve. I served four small servings with these amounts. Sadly none was left within half an hour. Enjoy.
