Mini stuffed peppers

  • 6 mini peppers
  • Fresh basil
  • 1 peach
  • Olive oil
  • 1tsp paprika
  • 100g tuna
  • 4 sundried tomatoes
  • 1tsp wasabi
  • Step 1 Wash the peppers, scoop out the middle and place on a baking dish and bake for twenty minutes until peppers are baked. Set aside.
  • Step 2 Get your blender and add the basil, blend until basil is in small pieces. Peel your peach, chop and add to the blender together with the tuna, sundried tomatoes, olive oil, paprika and wasabi and pulse for a couple of seconds.
  • Step 3 Place the mini peppers on a serving dish and add a teaspoon of your mixture to each pepper. Set aside for when required or serve. I used the leftover mixture in a delicious sandwich for lunch.
