Teaming up with Farmer’s Deli to create recipes out of what they deliver is going to be great fun and useful too. To make this veg stir fry with a passion fruit dressing you will need the following,

A SPICY VEGETABLE STIR FRY

Ingredients
  • In my box I had a choice of the vegetables listed below and I used the following quantities,
  • 1 medium sized eggplant
  • 2 beetroots
  • Fresh local garlic, I used 3
  • 2 red chili pepper,
  • 1 leek
  • 200g fresh kale
  • 90g okra
  • 3 lemongrass
  • 2 passion fruits
  • A handful of fresh parsley
  • From my kitchen I used ,
  • cooking oil
  • coconut oil
  • 1 tsp turmeric
  • 1tsp cardamom
  • 1 tsp cumin
  • 100g coconut flakes
Directions
  • Step 1 Peel and chop the beetroots and roast with some coconut oil in a dish and repeat the same with the red chili peppers. I cut them in half and removed the seeds, as they are quite spicy. If you don’t like it so spicy use a half or one. Remove the roast veg and set aside.
  • Step 2 Peel the lemon grass by chopping off the top part and peeling the outer layers and removing the end bit. Slice thinly and add them to your pan with some cooking oil. You can also crush them in a mortar and pestle to extract the flavours.
  • Step 3 Peel and chop the garlic and add to the pan, peel your leek and cut it into strips and add to the pan. Add your spices and mix together and add your coconut flakes and keep stirring on a low heat.
  • Step 4 Get a griddle pan and add some coconut oil and heat. Wash and slice your eggplant and cook on the griddle pan on both sides. Remove them, place them on a plate and add your kale to the pan and cook on both sides. Switch off and add the kale to the eggplant.
  • Step 5 Chop the passion fruit in half and scoop the liquid and seeds out and place in a bowl. Get two bowls and line the bowl with kale and eggplant, mix the rest of the veg together and keep the chili on the side of the dish if you don’t want it to be too spicy. Pour the passion fruit over and serve. With these quantities you can prepare 3 bowls and serve this recipe as a side dish or boil some rice to serve with the veg.
