Stuffed Tomatoes

We love cold food in this heat, stuffed tomatoes have been around for a while and there are quite a few variations on this recipe. This is one of the recipes I grew up on, giving me fond memories of summer holidays, picnics on the beach and family gatherings. Serve them with a salad or on some crunchy bread, simply delicious. To make this recipe you will need,

  • 2 cups fresh breadcrumbs
  • A handful of Mint
  • 2 hard-boiled eggs
  • 1 can tuna, oil removed
  • 1/2 cupful Olives
  • 1/4cup Capers
  • Step 1 Cut the tops of the tomatoes and carefully scoop out the pulp and peel them. Place them on a flat plate.
  • Step 2 Get your blender and pulse the ingredients together for a few seconds. Make sure you don’t blend for too long as you will end up with a pate.
  • Step 3 Fill the tomatoes with the mixture and place the lid on each one.
  • Step 4 Serve and enjoy.
