Sweet Corn Fritters

  • 2 large spring onions
  • 300g sweet corn kernels
  • 200g goat cheese.
  • A handful of fresh basil leaves
  • 2 free range eggs
  • 90g buckwheat flour
  • Sunflower oil for frying
  • Extra buckwheat for coating your patties
  • Step 1 Prepare your blender, peel and chop your spring onions, add them to your blender together with your basil and blend for a couple of seconds. Add the goat-cheese and pulse until the cheese is in small pieces. Strain your corn kernels and add them to the blender and pulse three times to have a good mixture for your fritters.
  • Step 2 Crack the two eggs into a bowl and add them to your ingredients, add the buckwheat flour and pulse for a few seconds so all ingredients blend together.
  • Step 3 Get a pan and add your oil ( just enough to cover the base of the pan.) Heat the oil on a high heat, so your oil is nice and hot. In the meantime prepare a bowl with the flour. Scoop up some of the mixture with a large spoon and coat the cakes in the flour to make sure they are not sticky and will cook nicely in the pan. Add the cakes to your hot oil and cook on each side until they turn a nice golden colour.
  • Step 4 Place the cakes on a plate and set aside. I made 10 large fritters with the above ingredients. Serve them with a salad and pack your leftovers in a lunchbox for the next day. Enjoy
