As I was preparing my Easter lunch I boiled some potatoes and wasn’t too sure what I was going to make with them. After some thinking I decided to make potato cakes as they are so yummy and comforting and go well with anything. I served them with the lamb fillet and Lamb chops topped with mint sauce. To make these cakes you will need,
Sweet Potato Cakes
- 400g sweet potatoes
- 100g red potatoes
- 3 celery sticks
- 2 tsp basil pesto
- 1 egg
- Coconut oil
- Quinoa flour
- Step 1 Boil your potatoes in a pot until soft. I boiled them separately as the sweet potatoes need less time. When cooked, strain and set aside.
- Step 2 In your blender add your basil, celery sticks, seasoning and pesto and blend. Add your cooled potatoes plus your beaten egg and pulse two or three times.
- Step 3 Prepare a bowl with your flour, heat a pan with some coconut oil, make your cakes by hand with your mixture and dip them into the flour. Place them into the heated coconut oil and cook on both sides until nice and brown. Place on a kitchen towel for a while. Set aside. This mixture make nine cakes.
