Ingredients
  • 1 red cabbage
  • 2 blood red oranges
  • 6 medjool dates
  • Coconut oil
  • Extra virgin olive oil
  • For the dressing you will need:
  • A handful of fresh mint
  • Olive oil
  • 1 tsp wasabi
  • 1 tbsp mayonnaise
  • 1 tbsp balsamic vinegar
  • Extra virgin olive oil
Directions
  • Step 1 To make the salad, wash and slice the cabbage, place in a pan with some coconut oil on a low heat and cover so you steam the cabbage until soft but tender.
  • Step 2 In another pan add 20ml of water and your pitted dates and boil on a low heat until dates are soft.
  • Step 3 Wash your oranges and slice them. Place them on a hot griddle pan with some coconut oil and sear them on both sides for a minute or two, remove and set aside.
  • Step 4 Mix the vegetables together in a bowl and set aside. To make your dressing, blend the mint, olive oil, wasabi, mayo and balsamic vinegar together and pour over the salad. Serve.
