Oat and Cranberry Cake

I find it very difficult to resist a slice of cake and a cup of tea. After reading and playing around with some ingredients I came up with a cake that is moist and yummy. Perfect for breakfast or a snack too. To make this cake you will need,

  • 1 pkt unsalted butter
  • 120g coconut sugar
  • 2 eggs
  • 100g oatmeal
  • 100g oat bran
  • 1 tsp xanathan gum
  • 1 tsp baking powder gluten free
  • 1 banana
  • 100g cranberries
  • 100g coconut flakes
  • 100g pecan nuts
  • 1 tsp cinnamon
  • Step 1 Heat the oven to 160c fan assisted. Get a loaf tin and line it with baking paper and set aside.
  • Step 2 Beat your butter and sugar until nice and fluffy. Add your already beaten eggs gradually to the mixture and keep beating. Once the eggs are incorporated into the mixture add the two types of oats together with the gum and baking powder. Add the cinnamon and keep mixing on a low speed for a while and after a few minutes add the banana and cranberries.
  • Step 3 Whilst the mixture is mixing, crush your pecan nuts and add to your cake mixture and finally add the coconut flakes. Give the mixture once last mix, on a low speed and then place the mixture into your tin and bake for around 25 minutes. Cake should be firm and should you place a skewer through it, it should come out clean. This cake lasted over a week and remained fresh.
