Beetroot Hummus Dip and Vegetarian Toast

I felt inspired to make a colourful snack come lunch and sit in the garden with all my reading. I thoroughly enjoyed the mixture of the vegetables and oil. Hope you will too, to make this you will need:

Beetroot Hummus

Ingredients
  • 1 cooked beetroot
  • 1 can organic chickpeas (drained and rinsed)
  • 1 clove garlic
  • Juice of a lemon
  • 3 tbsp olive oil
  • 2 tbsp tahini
  • A handful of fresh mint
Directions
  • Step 1 Add the mint and peeled garlic to your blender and blend together until mint is finely chopped. Add the rest of the ingredients and blend until you have a smooth paste. Serve with crackers or peeled vegetables.

Vegetarian Toast

Ingredients
  • 3 slices of bread of your choice
  • Olive oil
  • A few green and black olives pitted
  • 1 pkt feta cheese, organic
  • 1 cooked beetroot
  • A few cherry tomatoes
  • 12 baby asparagus
  • Oregano
  • Pepper
Directions
  • Step 1 Get two baking trays, place the feta cheese, olives, oregano and oil on one dish and place the asparagus, beetroot, cherry tomatoes and beetroot on another dish, sprinkle with oil and bake for 12 minutes in a fan assisted oven at 160c for around 12 minutes.
  • Step 2 Whilst your ingredients are baking, make your toast, drizzle them with oil. Add the ingredients and enjoy.
