Quinoa Salad

Today was a lovely sunny day and driving home I was planning lunch and felt like a summery meal and decided to prepare Quinoa. This is high in protein and also good for you so give it a try. This serves 6.

Quinoa Salad

  • 1 packet mixed quinoa (250g)
  • A handful of basil
  • 1 jar anchovies
  • ½ a jar sun-dried tomatoes
  • 20 pitted black olives
  • 8 green olives
  • 1 and ½ tbsp hemp oil
  • Himalayan salt
  • ½ tsp nigella seeds
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 handfuls fresh spinach leaves
  • A sprinkle of Agave
  • Step 1 Cook your quinoa according to instructions on the packet, usually one cup quinoa to two cups water. Let it boil, simmer and remove from heat. Let it cool.
  • Step 2 In your blender, blend your basil well, remove the oil form the anchovies and add the anchovies to your blender together with the olives, hemp oil, olive oil, nigella seeds, apple cider vinegar and pulse for a couple of seconds.
  • Step 3 Add the salt, mix the ingredients together with the quinoa and slice the spinach leaves roughly and add to your dish. Sprinkle your agave syrup and toss. I didn’t need to add more oil however feel free to add some more oil should you need. Serve and enjoy!
