Onion Marmalade Quiche

Sometimes we feel like a bit of sweetness in our life. This is a quick and tasty recipe.

Onion Marmalade Quiche

  • 1 packet puff pastry
  • A handful of mint
  • 1 leek
  • 1 packet Pancetta
  • 1 tbsp. tomato jam
  • 2 tbsp. onion marmalade
  • 5 free range eggs
  • 1/2 a pot kefir yoghurt
  • 150g cherry tomatoes
  • 100g pecorino cheese
  • Step 1 Roll out the pastry on a floured surface and place into a greased baking dish (I used a 25cm dish).
  • Step 2 Heat a pan with sunflower oil and add your peeled and chopped leek. Add the pancetta and cook.
  • Step 3 Blend some mint in a blender and add your eggs and yoghurt and blend. Add the tomato jam, onion marmalade and the cheese to the mixture. Proceed to add the cooked leeks and pancetta and pulse all ingredients for a few seconds.
  • Step 4 Add the mixture to your pastry and bake in a fan assisted oven at 160C for around 20 minutes, or until your pastry is crunchy and mixture has set and baked well. Serve with a salad.
