Chicory Salad

Spring brings colour, happiness, fresh flavours and ingredients to help us enjoy the long warm days. I picked up some chicory and was intrigued to try a salad with this beautiful vegetable. To make this chicory salad you will need the following ingredients. I prepared two portions of salad with these quantities.

Pretty Chicory salad

  • 2 Chicory
  • 1 leek
  • A handful of fresh basil
  • 100g smoked salmon
  • ½ the zest of 1 lemon
  • 80g walnuts
  • 2 hardboiled eggs
  • A handful of fresh lettuce leaves or spinach
  • 1 tsp mustard
  • 1 tsp honey
  • Some olive oil
  • Step 1 Slice the bottom off the chicory and remove the leaves and place them around your salad bowls.
  • Step 2 Blend your basil and leek and place in a mixing bowl together with your roughly chopped smoked salmon, lettuce leaves and roughly chopped walnuts. Toss the ingredients together and add the sliced hardboiled egg and place them in your bowls lined with chicory.
  • Step 3 Prepare your dressing by adding some olive oil, your mustard, honey and lemon juice in a bowl and mix together. Pour some over your salad and dig in.
