Serve these delicious canapés amongst friends. I prepared 20 rolls with the quantities below.
Aubergine & Artichoke Hummus Rolls
- 2 large aubergines
- 3 artichokes
- 2 tbsp. tahini
- A handful of mint.
- 1 clove garlic
- Olive oil
- Rock salt
- 1 lime
- 1 packet goat's cheese
- Step 1 Boil the artichokes until soft and remove the flesh and keep aside.
- Step 2 Wash and slice the aubergines lengthways and place them on a baking tray. Sprinkle with rock salt and olive oil and bake for around 15 minutes until cooked.
- Step 3 Blend your garlic and mint and then add the cheese, artichokes and tahini and pulse until smooth. Add your oil and the zest of your lime. Pulse once more and set mixture aside.
- Step 4 Place your aubergine slices on a tray and spread a layer of the artichoke hummus on each aubergine slice. Roll, place them on a plate and serve.
