Oatmeal Banana Muffins

Pour a fresh brew of tea, have a chat with some good friends around the fire and dig into these muffins. This recipe makes approx. 12 muffins.

Oatmeal Banana Muffins

  • 1 packet Stork margarine
  • 40g Coconut sugar
  • 200g Oatmeal flour
  • 1 tsp baking powder
  • 1 tbsp ground Cinnamon
  • 1 ripe Banana
  • 1 packet Crushed Pecan nuts
  • 1 tbsp Coconut oil
  • 2 eggs
  • Step 1 Heat the oven at 160 Celsius.
  • Step 2 Beat the butter and sugar until nice and fluffy. In a separate bowl, beat the eggs with a fork before adding to the cake mixture. Add the oatmeal flour together with the baking powder and your peeled and chopped banana and keep mixing. Finally mix in the coconut oil together with the cinnamon and pecan nuts.
  • Step 3 Get a muffin tray and line with paper cases and add your mixture. Bake in a hot oven for around 25 minutes until cakes are soft and springy in the middle. Remove from the oven and leave to cool before removing from tray. Put the kettle on and have tea.
