Comfort food comes in all shapes and sizes, however my type of comfort food will forever be a patty. There is nothing more delicious then having patties on standby and you can eat them warm or room temperature on a bed of cauliflower rice or with some fresh bread. They also make the perfect sandwich filler too. To make these patties you will need,

Lentil and kale patties

Ingredients
  • 120g puy lentils
  • 150g curly kale
  • 1tbsp ground cumin
  • Seasoning
  • 1 egg
  • A handful of fresh basil
  • 1tbs smoked paprika
  • 1tbs onion powder
  • 1tbs dried oregano
  • Sesame seed
  • Olive oil
Directions
  • Step 1 Cook your lentils in a pan of hot water, strain and set aside. Blanche your chopped kale leaves in hot water, strain and set aside. (Ideally the lentils and kale are cooked before hand and stored in the fridge overnight as I always find the best patty consistency is made out of cold ingredients.)
  • Step 2 Get your blender and add all your ingredients, pulse until the ingredients are broken down into small pieces however make sure you donโ€™t create a puree by over blending. Prepare a dish with your sesame seeds.
  • Step 3 Form your patties with your hands and then place each patty into the sesame seeds and coat them. Get a baking tray, add some oil and bake them for around 15 minutes at 160C. With the above quantities I made 8 patties.
