I am in love with chocolate. It is so beautifully welcoming to the palette and we all need that bit of sweetness in our lives. These balls are great to serve after a meal or with coffee. This recipe makes around 20 balls.
- 12 medjool dates
- 2 tbsp. coconut oil
- 2 tbsp. raw cacao
- 1 tbsp. peanut butter
- 200g roasted nuts
- 1 bar of dark chocolate
- Step 1 Pit your dates and add them to your blender, add the nuts and blend until you have a crumbly mixture.
- Step 2 Add the cacao, peanut butter and coconut oil and pulse until all ingredients are combined. Pulse is a better option as you want a crunch when biting into them.
- Step 3 Melt the chocolate (I find it easiest to melt in the microwave) and proceed to roll the mixture into bite size balls.
- Step 4 Dip each ball into the melted chocolate and place them on a sheet of baking paper until they set. Serve them and keep a few aside for yourself when you fancy something delicious.
